Meat & Noodle Dinner, April 2015

One of our favorite pop-up dinners in the Seattle area, Lauren Garaventa & Team created rich broths from farm pigs they raised and butchered by hand, served as the most beautiful, seasonal ramen I've ever witnessed. These were some of my favorite dinners to pair for because of the asian influenced flavors and usual flavors to explore. 

KIM CHEE SPRING ROLLS
fresh radish kim chee & fermented daikon salad
served with a cocktail of
plantation rhum, eucalyptus tincture, 
celery, lime, smoked salt
 
GREEN GARLIC RAMEN
pork, seasonal greens, marinated egg 
and ramen noodles
served with a cocktail of
vodka, angel’s brew liqueur, charred tomato, 
lemon, habanero tincture
 
RHUBARB BUTTER MOCHI
rhubarb, butter, mochi, whipped cream
served with a cocktail of
gin, rhubarb syrup, orange, zucca rhubarbaro, 
saffron tincture, ginger beer

Cameron Hanin "Like Mama Made It", October 2015

Another of our favorite Seattle chefs, Cameron's food is as comforting and familiar as it is inspired and modern. Cocktail pairings with this menu were meant to further evoke the feeling of nostalgia and sense of place. Around this time the appearance of artisanal jell-o shots started to make an appearance in each menu. Leftovers would be sold in the bar the following week and became so popular that we kept a rotating selection on the menu.

Rick & Kate Poole "Family Meal", June 2016

This in-house dinner at E. Smith Mercantile featured family recipes and fresh, warm season ingredients. What had started as a mild jell-o shot obsession became a art form for this dinner and a beginning of my signature cocktail as jell-o shot tradition.
